An Oldie but a Goodie...Pumpkin Pie Cheesecake Party Favors!

Traditionally, throughout college, every year my roomies (at the time) and I would host a Thanksgiving Potluck. And each year I made these perfect individual pumpkin pie cheesecake party favors. This is one of my favorite/easiest recipes!! 

4 Packages of Keebler Elf Mini Ready Graham Cracker Crusts
(Each Package contains 6 for a total of 24)
1 cup sugar
3 (8 ounce) packages cream cheese
1 teaspoon vanilla
1 cup canned pumpkin
3 eggs
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice

For the top I added a little swirl of Cream Cheese frosting 
1 Pound (16 Ounces, 2 packages) cream cheese, room temperature 
2 teaspoons vanilla extract
1 cup (2 sticks) unsalted butter, room temperature
2 pounds (1 Bag) confectioners' sugar

Preheat oven to 350 degrees
  • In a large mixing bowl combine the cream cheese, 1 C sugar, and vanilla.
  • Mix with an electric mixer until smooth.
  • Add the pumpkin, eggs, cinnamon, nutmeg and allspice and continue beating until smooth and creamy.
  • Pour the filling into each mini crust with a spoon.
  • Bake for 60-70 minutes. The top will turn a bit darker at this point.
  • Remove from the oven and allow the cheesecakes to cool for 10-15 minutes.
  • Once the cheesecakes have cooled, put them into the refrigerator. I like to cook it the night before and then let it chill until the next day.

I purchased a pack of treat bags in the baking section at Michaels, as well as a roll of polka dot burlap ribbon to create this years Pumpkin Pie Party Favors.
