Graham Cracker Recipe and S'more Cookies

Graham Crackers

1 1/2 Cups All Purpose Flour
1 Cup Whole Wheat Flour
1/2 a Cup Untoasted Wheat Germ 
1/2 a Tsp. Salt
1 Tsp. Baking Soda
1 Tsp. Cinnamon (forgot in photo)
2 Sticks Softnened Unsalted Butter 
2/4 a Cup Packed Light Brown Sugar
2-4 Tbsps. Honey 

Preheat: 350 degrees 

  • Combine Brown Sugar, Butter, and Honey with a mixer until it's smooth and fluffy like the image below. 

  • Combine all dry ingredients using a mixer, set on a slow speed, until the mix becomes a dough like substance.
  • I had to add more Honey than the recipe called for because the dough was to dry to form a ball. 
  • Once, you are able to form a ball of dough, put this into a zip lock and in the freezer for 20 Minutes. 

  • Take the dough out of the fridge, prep the dough for rolling. 
  • Add flour to counter and rolling pin, so the dough does not stick. 
  • I used a small circle cookie cutter for my petite s'more cookies
  • This could be a fun idea for any occasion, including upcoming occasions such as the Super Bowl and Valentine's Day.

Viola!!! Graham Crackers from Scratch!!! 

Petite S'more Cookies

Homemade Graham Crackers :) 
Milk Chocolate Morsels 
Mini Marshmallows
Creme Brûlée Torch
(If you don't have a Creme Brûlée Torch, as I think it's safe to assume  that most people don't, my other thought process alternative would be to put them in the oven on broil to allow the marshmallows and chocolate to heat up just enough, so that they can stick together)

I lightly took the torch to each side to get the chocolate and marshmallows to stick to the cookie and then I smushed them together.

They may look messy, but they really are not so bad. 
Taste just as good and less messy the next day!!
