Finally tried out the Homemade Limoncello

One thing I remember in Italy and all the places I couch-surfed there, you could bet on the fact that a bottle of homemade Limoncello was in the fridge... What a delightful thing, to go into a country and learn some commonalities of their culture.

I remember thinking that then and wanting to attempt making my ownnow over two years later I have finally decided to give it a shot. And what better house warming gift than a bottle of homemade Limoncello.

Limoncello- Giada De Laurentiis' Recipe
    -Ten Lemons
    -1 Bottle of Vodka
-3 and 1/2 cups of water
-2 and 1/2 cups of sugar
After trying the limoncello, My advice would be to use way less sugar.  It was a little to sweet for my liking, and sweeter than I remember in Italy. If you add a little of the Limoncello to soda water it cools it down on sweetness factor a bit.

Lighter version idea:
Skip on the sugar! Add stevia instead if you want the sweetness. Or add just a flavored soda water.

With a vege peeler remove the peels from the lemons in long strips
Place the lemon peels in a 2 quart pitcher

Pour the vodka over the peels & cover with plastic wrap
Steep the lemon peels in the vodka for four days at room temperature
Once you have let the lemon peels steep in the vodka for four days, start the next step, stir the large saucepan over medium heat until the sugar dissolves around 5 or so minutes. Once that is done, let the sugar water cool completely, and then pour into the vodka lemon peel pitcher.

Let stand at room temperature over night.
Next day, strain the limoncello, discard the peels and transfer into bottles, let cool for four hours.
