Breakfast is the most important meal of the day!

Breakfast Cups

I was inspired by a recipe I saw in Martha Stewart Living. Her recipe is a little different, she used a round cookie cutter and also cut the pieces of bread in half. She also added bacon and other ingredients. I personally, like simple eggs and toast, with some pepper, salt, and hot sauce. I decided against the bacon because I'm trying to watch my calories (I added the calories at the bottom of this post)! This could be an amazing idea for a group of people, for catering a brunch, for a big family breakfast, or a simple and easy breakfast for yourself. This is how I did mine....
-2 whole wheat slices of bread
-2 whole eggs (not the large ones)
-a pinch of shredded Colby jack cheese
-salt and pepper to taste
-Tapatio hot sauce

1. Preheat oven to 350 degrees.
2. Add Pam or butter spray to your cupcake pan

3. Lay the whole slice over the hole and gently start to press down making sure to create a little bowl out of the bread.

4. I added a pinch of cheese, before adding the eggs. Then add the eggs. Be Careful when you add them.
5. Pop them in the oven, and let them cook for about 15 minutes. If you don't like your eggs cooked over easy or over medium, cook for 20+ minutes.

6. Fresh out of the oven!

7. I added Tapatio, because I like hot sauce on my eggs. You can add whatever you would like to the top. Salt and Pepper. Cheese. Salsa. There are numerous possibilities.

8. Makes the perfect little muffin, I personally love eggs over medium, so I have mine like that

So, just a little bit of that yolk, like I said you can cook it longer and get pretty much a hard boiled egg. inside.

Whole Wheat Toast (2): 130
Eggs (2):140
A pinch of  shredded Colby jack cheese (twice): 14
Hot Sauce: 0
Amazing total of: 284 for two. Not so bad
If you wanted to lesson the calories, just use egg whites.
If you added bacon, a strip can range from 40 to 70, so you would add up to 140 calories.

I calculated a pinch of cheese: more or less is a teaspoon. 1/3 cup of shredded colby jack cheese =110 calories.
There are 48 tsps. in 1 cup, so 16 tsps. in a 1/3 of a cup.
110 divided by 16= 6.875 rounded up = 7 calories.
